In fact, our annual holiday party is this weekend which makes it the absolute perfect week for me to share with you some recipes that are perfect for holiday eating
like this roasted tomato bacon chutney!
I really
like roasted tomatoes... all you need is a little salt and olive oil and you have the best bruschetta!
Why does it have to get so atrociously hot in the summer and make us not want to turn on the oven and do lovely things

For packed lunches I normally make big batches of quinoa and brown rice with apple cider vinegar / lime and salt and then do a big thing of
roasted veg — things
like sweet potato and squash cubes, so I throw a mix of that into a tupperwear with some raw veg — things
like avocado, grated carrot,
tomatoes and then some hummus / lentils / chickpeas / seeds for protein.
I
like the
roasted cherry
tomatoes with a mix of spinach and rapini made garlicky and spicy and cooked with fennel seeds or that pizza spice mix.
My mom
roasts her own chili's and
tomatoes which just seems
like too much work for me.
I also
like roasting grape
tomatoes.
I didn't have fire -
roasted tomatoes (just regular), but I didn't feel
like it was missing the them.
This warmed spinach and orzo salad has so many goodies
like; cherry
tomatoes, freshly grated parmesan, garlic, mozzarella, and pan
roasted...
Some suggestions: instead of
tomatoes, try any juicy, slightly sweet vegetable; add some kidney beans in there; replace the cucumbers with something equally crunchy,
like fresh bell peppers; if you
like the taste of raw onions, you can put some of those in; sub out the Feta for a goat cheese or perhaps Parmesan shavings; add
roasted nuts or seeds; etc..
My only concern is that I've already been buying what feels
like large quantities of
tomatoes on the weekends and finishing them within a day or two... I might have to make a special
tomato - only greenmarket trip to make sure I buy enough to
roast and also to satisfy my constant raw -
tomato cravings!

They are shaped
like an oval and have less water than cherry

roast with fish, they produce a slight sweetness in the fish!

roasted tomatoes to take them with me to the party so i whipped up some of your mother's white bean humus quick
like.
It's a trick I use all the time in recipes
like my Kale Caesar Pasta Salad or my
Roasted Tomato Sauce that's so tasty on any pasta or in lasagna.
If you'd
like, you could certainly
roast a fresh red bell pepper to go along with the
roasted tomatoes and caramelized onion, but I always keep a stash of my favorite jarred

like capers, I had some other ingredients I needed to use up and so I once substituted the capers for oven

like to take the
roasted tomatoes, add some herbs, salt and pepper with a «glug» of avocado oil.

like hummus / pesto /
tomato sauce as a base, loads of
roasted veggies, your fave herbs / spices and some chickpeas / lentils for extra protein.
When I was in Greece, I ordered it for dinner nearly every night, along with other mezze dishes
like eggplant salad,
tomato fritters, and
roasted mushrooms.
We usually have it plain, or
roast it with a little garlic, but that
tomato sauce sounds
