Healthy eating on Labor
Day is easier than you might imagine with summer menu items
like salads, grilled meat and seafood, fruit, veggies, salsas and dips.
It just occurred to me one
day while eating some cold chickpea
salad (with whole chickpeas) that I really didn't
like the taste of the skins.
But drinking plain water all the time is
like eating the same lettuce and chicken
salad for three squares a
day: It's healthy, but it's also boring.
I love
salads like this that you can just keep in the fridge for lunches and they typically get better with each
day!
If you're
like me and you
like to meal prep
salads for the week (or before your guests arrive), prepare this
salad a
day ahead, but only as separate components (for optimal freshness).
As far as shelf life in the fridge, I would say up to 4
days or so, just think of it
like a prepared
salad, in cake form.

like spring is just around the corner.
Also, this does look just
like the Greek
salads I ate twice a
day during a trip to Greece three years ago.

I adore
salads — I tried to eat a
salad a
day for a whole week — thinking it might work much
like a rain dance and move spring here quicker — alas the whole thing backfired and we are back to lows in the 30's this week — with 29 F on Wednesday!
