Today, it is often used to flavor and dye foods,
like mochi,
soba noodles, and wagashi, a Japanese confectionery.
Personally I find it has a VERY strong flavour and I can understand what some people mean when they say it tastes
like «dirt», although I do actually
like the taste in most things (although the other day I used some of the water from cooking
soba noodles in another recipe and it was gross!).
You can keep it simple if you
like, but in this version I add
soba noodles and tofu, and a few garnishes.
It's perfect whenever you're serving a salad alongside something
like Asian Chicken

Soba Noodles with Roasted Eggplant.
Just recently, I've taken on a strong
liking to
soba noodles and have been using it more often.

When I wrote to my mom asking her for the exact proportions of the very simple dressing we always
like to put on our
soba noodles (from the back of the
soba noodle box, I'll admit), she emailed back with the right proportions of rice wine vinegar, soy sauce, sugar, and sesame oil — and, more importantly, to say that
noodle salad was among Jill's favorite dinners.
Thick, hearty udon or
soba noodles make this quick soup substantial, yet it's not too filling to serve as a first course for an Asian - style meal,

At the time, I had no idea that buckwheat, the main ingredient of

like ramen, rice

liked both versions although the zucchini
noodles remind me more of the summer than
soba noodles.

noodle you'd
like for this salad: Ramen,
Soba, Rice Vermicelli.
Like Mr. Rogers, these
soba noodles will always be here for you.
Basically, the recipe goes
like this: Cook
soba noodles in boiling salted water for a mere 5 minutes, because they're low maintenance
like that, and then drain them.
So let's say you've purchased a healthy pasta,
like buckwheat
soba noodles, or penne made with brown rice or pulses.
You could use this to season a
noodle dish
like Cha
soba, udon, Japanese style meat and potato stew, or a seasoning for an omelette.
I
like using
soba noodles for my Asian
noodle salads.

What I would also
like to say though is that it is important to watch what you are having with the
soba noodles.
When you're trying to get your kids to eat something new,
like North African — Spiced Vegetable Tagine or Hoisin Chicken With
Soba Noodles, you may have to cater to their other interests.
Turns out, within days I was bopping from neighborhood to neighborhood on public transport
like a pro, eating my way through every sushi and
soba noodle joint solo and gaining more confidence by the day.
Most commonly, I boil
soba (buckwheat)
noodles, fry some tofu cubes, and sauté a bunch of greens,
like kale, bok chop, or rapini, in order to make vegetarian bowls for dinner.
