Hi, what is the best way to mix nut
butter with plant based milk (
like almond or
soy milk), so I can make my overnight oatmeal / chia seeds breakfast?
I made these last night with the following variations — tamari subbed for
soy sauce, almond
butter instead of peanut (I don't
like peanuts or their
butter), and I added italian seasoning, garlic salt, and oregano to taste.
Vitamin K is found in liver, egg yolks,
butter, grains, dark leafy vegetables, vegetables of the cabbage family and fermented
soy foods
like miso (and natto).
Frosting: (measurements are approximate) 3 tablespoons vegan cream cheese, at room temperature 3 tablespoons vegan
butter (I
like Earth Balance), at room temperature 1 1/2 tablespoons pumpkin puree powdered sugar (start with 1 cup and add more until desired consistency is reached) unsweetened, plain, vanilla or vanilla lite
soy milk (start with 1 tablespoon and add more until desired creaminess is achieved)
Vegan Maple - Cream Cheese Frosting: 1/4 cup vegan
butter (I
like Earth Balance), softened 1/4 cup vegan cream cheese, softened approximately 2 - 3 cups powdered sugar approximately 2 - 3 tablespoons unsweetened
soy milk (or plain, vanilla or vanilla lite) 1/2 teaspoon maple flavoring
Nothing
like making a breakfast of mini-spoons of peanut
butter followed by burritos, naan,
soy yogurt, noodle stir fry, and vegan cream cheese!
But,
like I mentioned before, this ice cream only has two ingredients - frozen bananas and natural peanut
butter (and a splash of
soy / almond milk if your blender needs a little help)- but is still super creamy and satisfying.
I used the 1/3 cup sugar suggested, half cup blue cornmeal (cooked this) plus yellow, unsweetened
soy milk,
like 7 / 8cup buttermilk for sour cream (made with both milk and
soy milk), gf + whole wheat flour, and half
butter / half canola.

If you don't tolerate /
like coconut, swap another milk (almond,
soy, etc.) for the coconut milk and another fat (canola oil,
butter, etc.) for the coconut oil.

What's to love: No wheat, no gluten, no
soy protein, kosher, the almond blueberry Zing bar tastes
like chewy delicious almond
butter with a subtle blueberry twist.
A little garlic, a lot of ginger, some nice, mellow white miso (you can use any kind you
like, though), a good, organic, unsalted peanut
butter, some
soy sauce, a little sugar, and a few other things go into the food processor.
-- Earth Balance makes a non - dairy /
soy free spread too (nothing
like butter, but it does the trick!).
& I also used Earth Balance Coconut Spread (in place of the
butter) because both my kids have a dairy allergy & can not have real
butter & I
like to not always use
soy either.
This version has
soy milk and vegetable oil in the dumplings, but you could use regular milk and
butter, or even some shredded cheese if you'd
like.

So we made them - they were just as you would expect from looking at the pictures - SO GOOD... Kind of
like a chewy crunchy brownie stuffed with sweet peanut
butter - perfect with a glass of cold

I ended up not
liking so much of the orange juice flavor so I added a little more peanut
butter and
soy sauce at the end.
