This is great if
you like sweet potatoes for breakfast because you can cook them overnight.
Feel free to change out some of the ingredients included in the bowl of you prefer something different,
like sweet potatoes for the regular potatoes or another root vegetable if you hate beets.

sweet for me already), though it was lots of work but just so great!

For packed lunches I normally make big batches of quinoa and brown rice with apple cider vinegar / lime and salt and then do a big thing of roasted veg — things like sweet potato and squash cubes, so I throw a mix of that into a tupperwear with some raw veg — things like avocado, grated carrot, tomatoes and then some hummus / lentils / chickpeas / seeds for prote

One thing that would make this recipe even better: include the weight
for things
like the
sweet potatoes, eggplant and spinach.

sweet potatoes in 100 - degree weather, maybe grill or steam them instead; prepare the foods in a way that makes you happy!
Like,
for example, the
sweet potato wedges I make on a weekly basis, the kale and
potato hash with a fried egg on top that I sometimes make every other night
for dinner, or my overnight oats and old fashioned oatmeal that I swear by.
I
like to use the fresh
sweet potatoes not the canned variety in this recipe and it really isn't difficult at all to cook them
for the dish.
I usually stick to savory dipping sauces
for sweet potato fries (think: sriracha aioli), but I think the tanginess of Greek yogurt would be totally delicious with a little bit of honey, vanilla, and spices,
like you suggest.
I still would
like a dressing that is healthy
for your stuffed
sweet potato recipe.
And I've done a pretty good job of making big batches of meals
