you like sweet potatoes for breakfast because you can cook them overnight.

I know she
likes a
sweet breakfast over a savory one, not to say that she doesn't
like my
potato crusted quiche, but I need to make her sauteed apples on the side
for a
sweet note.
Instead, I go
for porridge with various toppings, baked oats, big smoothies, pancakes, waffles, chia puddings, overnight oats,
sweet potatoes with nut butter and homemade treats
like muffins, scones or
breakfast cookies!
We are currently on a mission of fridge clean - up so my eats
for the past couple days look something
like these:

The thing I
like the most about this recipe is that you can cook extra
sweet potato hash
for dinner and keep some
for breakfast.
A typical full day of eating
for me looks
like:
Breakfast: Spinach, Mushroom, Onion and Tomato Frittata... sometimes with bacon or homemade sausage Iced Coffee with coconut milk Lunch (this is usually my largest meal of the day): 4 - 5 ounces of protein (turkey burger, pulled pork, chicken thighs, ground buffalo), roasted veggies and sometimes a
sweet potato or butternut squash Snack: apple with almond butter or a handful of macadamia nuts Dinner: A large salad with all kinds of raw veggies (cucumber, celery, carrots, cauliflower), avocado or olives, usually a lighter protein
like grilled chicken breast, salmon or shrimp This would represent a full menu... I would say I hit this about 4 - 5 days a week, other days I may omit the snack or keep the snack and omit a meal, if i do that though I would add a bit of protein with it.
with the addition of spiced
sweet potato, this buckwheat porridge is elevated to pie -
like status which makes
for a wholesome
breakfast that eats
like dessert and feels
like victory.
Voila, a
sweet potato pudding
breakfast that kind of tastes
like it should be dessert but it is so good
for you.
On a practical level, this means that
breakfast for me is protein + veggies and dinner is protein + healthy carbs
like sweet potatoes or squash.
I
like sweet potatoes so why not
for breakfast?
