vegan pumpkin bread recipe,
pumpkin spice granola was something I knew I had to make once I'd decided to take part in #pumpkinweek2015.
2 1/2 cups hot water 3 tablespoons ground flax seed in 6 tablespoons water (lightly beaten) 1 cups agave nectar 3/4 cup
vegan butter
like Earth Balance 1 1/2 cups sugar (evaporated cane juice)-- use 1/2 cup less sugar if you don't want it very sweet 2 teaspoons vanilla extract 1 tablespoon vinegar 2 cups rice flour 1/2 cup sorghum flour 1 1/2 cups tapioca flour 2 teaspoons baking powder 2 teaspoons baking soda 2 teaspoons xanthan gum 1 teaspoon cinnamon 1 teaspoon mace 1/2 cup ground almonds (if allergic to tree nuts, or use sunflower or
pumpkin seeds) 1 cup finely grated carrots
I'm just going to warn you now that
vegan pumpkin gnocchi doesn't give you a big bang of
pumpkin flavour, just
like potato gnocchi doesn't taste of potato.
However, if you have a
vegan pumpkin biscuit recipe you
like, feel free to substitute.
Filling, topping, and garnish of your choice (I
like vegan sour cream, cashew cream or a jam / chutney for the filling, maple syrup over the top, and a garnish of toasted
pumpkin seeds or nuts, but the sky's the limit!)

like coffee) 1 cup hot water 1/2 cup chopped walnuts or pecans (optional, if allergic to tree nuts, or use sunflower or
pumpkin seeds) 1/4 cup dried unsulphured papaya, cut in 1/4 inch cubes 1/4 cup dried unsulphured pineapple, cut in 1/4 inch cubes or 1/2 cup raisins or other dried fruit (in place of papaya and pineapple) Additional agave nectar for brushing the cake (about 1/4 cup)

like that) Definitely gonna make it for the thing for work, I think it'll be a hit, & it was definitely easy to make - the only thing I had to buy that I didn't already have was a can of
pumpkin puree, & it was inexpensive to make.
THe texture & taste of this bread is already
