I like white bean chili and I always add cumin to most all of my dishes.
Some of them,
like the white bean salad will become a staple on our menu, it is fresh and crunchy and easy to make.
Although it's one of the first recipes that caught my eye in her book, there are many others
like a white bean risotto, a vibrant green broth - y tofu noodle soup and some baked beans that I'd also like to make — oh, and the Earl grey tiramisu sounds pretty great too!
Eating plenty of hearty flavorful soups
like this white bean and sausage with escarole is one of the easiest, tastiest ways I know to increase my intake of vegetables.
Make this broth as the base of this recipe, and then throw in whichever ingredients tickle your pickle, but I highly recommend some greens like kale and some legumes
like white beans.
I also substituted northern beans for kidney beans because
we like white beans better than kidney.

I make a similar meatless chili in a crockpot (I make a LOT at once and freeze for a quick lunch or dinner for 1 or 2)- and I think you'll
like this idea: along with carrots, celery, onions and garlic, I usually use 3 - 4 cans of (low sodium, rinsed)
beans (2 kidney, 1 each of another; I
like black and small
white or pink
beans), 3 - 4 red / yellow / orange sweet peppers (I but at the farmer's market when fresh and cut up and freeze the extras for making chili in the fall / winter); 1 or 2 zucchini and / or yellow squash, and (drum roll) 1 can of organic PUMPKIN PUREE!
I didn't find it to be bland at all (though you do need to
like the flavor of
white beans).

like brown (and
white) rice, lentils,
beans and quite a few other gluten - free options.
-- 1 can mixed
beans (I used Scarpone's which was composed of a melange of red kidney
beans,

like will work)-- 1/4 cup uncooked wild rice, cooked in veg stock until tender — 2 large stuffer mushrooms — 1/2 to 1 cup panko bread crumbs (I know this is quite the range but it really depends on the moisture content of your burgers — they won't hold together if they are too soupy)-- salt and pepper, to taste (I indulged in a healthy amount of truffle salt)

like cashews and will help create that same creamy, rich flavor without any fat (plus they'll add extra fiber!).
