"Lime sherbet" refers to a type of frozen dessert made with lime flavor. It is similar to ice cream or sorbet, and has a tangy taste.
Full definition
To simulate the thick outer green colored skin of a watermelon we
use lime sherbet.
Then, with a rubber spatula or spoon, coat the inside of the bowl with an even layer of the
softened lime sherbet.
We used to buy a cheap, unbranded gallon of pastel
green lime sherbet from the supermarket, but apparently health consciousness has done away with the availability of that.
Over the years this shake has morphed from a lemon and
lime sherbet concoction, to a vanilla sundae with disturbingly neon - green shamrock sauce, then into a milkshake, and eventually evolved into the mint and vanilla flavored drink that's so popular.

You could also make this with orange, lemon or
lime sherbet (or a combination).
Place
the lime sherbet in the bowl of your electric stand mixer, fitted with the paddle attachment, and beat on medium low speed until the sherbet is soft enough to spread easily, about 10 - 15 seconds.
Remove the metal bowl and place the watermelon bombe back in the freezer until serving time (
the lime sherbet may have softened a bit from the hot towel).
Remove the bowl from the freezer and again, using a rubber spatula or spoon, evenly coat
the lime sherbet layer with the vanilla ice cream.
As with
the lime sherbet, beat the ice cream until it is spreadable (about 20 seconds).
Once
the lime sherbet is firm, take the vanilla ice cream and place it in a clean mixing bowl.
