1) 1 1/2 cups of tapioca
flour (also known as «cassava» in Brazil) + a little more if batter is too
liquid 2) 1/2 teaspoon of salt 3) 1/3 cup olive oil (I prefer the non-extra virgin
type so the taste is less strong) 4) 1/3 cup whole milk 5) 1/3 cup water 6) heaping 1/3 cup fresh Parmesan cheese, finely grated 7) 2 small eggs (or 1 large egg)
If you don't have coconut
flour you can use any other
type of
flour of choice, however, the amount will have to be more than what I have used in this recipe since coconut
flour absorbs a lot of
liquid.
Making changes to the
type of
flours will effect how much
liquid is absorbed.
It's possible to use coconut
flour in this
type of recipe, but the ratio of the
liquid ingredients would have to be significantly modified.
I use their coconut sugar,
liquid coconut oil, coconut
flour, cacao powder and two
types of PBfit all in this one recipe!
When baking with sprouted
flour you may need to adjust the
liquid measurement in the recipe slightly but again it does depend on the recipe you are using it in and what
type of
flour the original recipe called for.
The proportion and
type of
flour and
liquid can vary dramatically, from a stiff starter made entirely with rye
flour and water, to a
liquid batter of milk and cornmeal, and everything in between.
The batter can be thicker or thinner depending on the
type of
flour and just random variations in each batch, next time feel free to add an extra tablespoon of
liquid and that'll thin them out a bit.
