I also used apple sauce instead of the agave and added a little stevia.

I decided to use homemade apple sauce as a major ingredient in the filling and adding only a little more almonds in the filling.

Also, for the sauce I omitted the apple butter and used a little mustard in place of it for some pungency.

I used only a tad more than 3/4 cup of sugar (turbinado sugar) instead of a whole cup, and increased the apple sauce by a little bit.

I have to admit, I didn't use the prunes (I didn't have any)- I used unsweetened apple sauce and a little bit of yogurt (combined to make the same quantity as the prunes).

The texture of the unwrapped butt will have crunchy edges and the inside meat will not have the seasoning of the injected one but the best way to eat it is to pull the whole butt and toss it together, and if you add a little apple juice, rub and maybe a little sauce it ends up close to the same.

I added a tad of oil into the batter and a little more apple sauce and raspberries.

I paired with some vanilla bean ice cream and a homemade apple caramel sauce on top, which made it a little more elegant and fancy and more dinner - party friendly.

A little too sweet for me because I wasn't able to find an apple sauce brand without added sugar, but I will keep looking for a better one for next time.

We did quite a bit of substituting, no agave nectar in Finland, soy yoghurt is too pricey and we didn't have flax seeds either, so we substituted water, orange juice (because I wanted some orange there), a little more apple sauce, a few tablespoons of soy flour and a bit more sugar.

So, I used a little extra brown sugar, increased the vanilla and cinnamon, added a pinch of nutmeg, threw in some raisins (obvi), and used up some unsweetened apple sauce that I had left over in my fridge (for added sweetness).

I always like to add shredded veggies, broccoli, red bell pepper, ginger, apple cider vinegar and a little tamari or soy sauce to my stir fry.
