Beyond being absolutely adorable, these
little roasted garlic
baby squash are tender, tasty and filling.
You can use different root veggies,
squash, kale etc. and when mixed with some egg and sometimes a
little wholegrain, they actually constitute a
baby meal.
The skins (especially on organic butternut
squash) are edible, but I would skip them when serving to
baby since them might be too tough for
little mouths.
Every time I get a
little bit of
baby fever, I look at my daughter and the thought is immediately
squashed.
Babies are often fond of the taste of butternut
squash, and it is also not a common allergen, which makes it a good, safe choice for
little ones at this stage of the weaning process.
