Sometimes it's the sugar that helps with moisture and these cookies only have
little bit of maple syrup in, so it's a bit of a compromise:)

Consider that maybe hemp milk will work, you just need to add a
little bit of sugar (cane sugar,
maple syrup, honey, etc) for the bacteria to feast on, like
in this coconut milk recipe.
