Followed the recipe exactly, except I sprinkled
a little celery salt on it after I was done.

The rest was easy: a
little mayo, finely chopped
celery, pickle relish and, for good measure,
celery salt (though
celery seed would substitute nicely).
For the
celery, I simply diced a couple of stalks and put the pieces in a glass bowl with apple cider vinegar, a
little agave nectar and a sprinkle of
salt, and let it sit for a few hours.
I do love
celery, and the
celery salt gave it a
little more tartness (which I love).
It only takes about 15 minutes to whip up a delicious chicken - like salad using mashed garbanzo beans, chopped
celery, diced onion and red peppers, egg - free mayonnaise and a
little mustard, Italian dressing, garlic,
salt and pepper.

My mother would make a recipe like this but you don't mash the avocado... you cube it: 1 avocado cubed, 2 hard - boiled eggs cubed, 1/2 cup chopped lettuce, 1 stick of
celery, a
little cilantro (you decide how much), 1 lemon juiced, teaspoon of lemon zest,
salt, pepper.
