Today, I prepared an easy, breezy, cheesy, super simple tomato salad using
little cubes of cheese and cucumber.

When you
cube the
cheese, you get nice
little pockets
of melted cheddar.
Ingredients 1 tablespoon butter (or olive oil if you prefer) 1/2 to 1 cup
cubed, toasted bread (multi-grain or other... your call) 2 large eggs 1/4 cup (or a
little less) jarred salsa (your favorite) or other condiment
of your choice) 1/4 cup grated (or shredded) cheddar
cheese (or other
cheese of your choice)
A
little cottage
cheese or ricotta stirred in gives it extra creaminess, and instead
of wrestling with a whole butternut squash on a weeknight I just dump in a bag
of frozen,
cubed butternut squash.
Chicken Nuggets: 3/4 pound skinless, boneless chicken breast cut into 1 - inch
cubes 3/4 cup flour salt and pepper to taste (I also added a bit
of cayenne for a
little kick) 1 egg, beaten 1 cup panko or regular breadcrumbs 1/3 cup grated parmesan
cheese
The vegan
cheese is an odd one — it doesn't truly melt, so becomes just as much a part
of the toppings as the other ingredients, so I would say that a
little less
of it would probably work better, rather than the
cubes part - melted, but the flavour was good, and it's so nice to have the option.
They we're fantastic, and I can actually imagine
little architectural
cubes of them being right at home on a
cheese plate.
I bought a block
of cheese and cut it into
little cubes for a basic
cheese tray.
I bought those
little cubes of Sargento
cheese but if I ever slept, ever had it to do over again, I'd chop up the
cheese myself.
Have a
little bit
of leftover meat, chicken or fish, hard - boiled eggs or deviled eggs, cucumber slices topped with a tuna salad, celery sticks spread with almond butter or a few
cubes of any
of your favorite
cheese.
Little cubes of hard
cheese or toast are useful and not too messy.
