I tweaked this recipe a bit, while I am not a fan of too much spice or heat, I
felt it needed a
little kick so the
pumpkin wouldn't overwhelm the sauce it make it bland.
The butternuts, the hubbards, the red kuris... and even a
little bit of the
pumpkin pie variety which I dislike because they
feel a bit anorexic on the fleshy side.
Does it
feel like
pumpkin has been all the rage a
little bit more than usual this fall?
I am a huge fan of
pumpkin desserts but I do
feel like each year gets a
little more
pumpkin crazy.
I've even been getting a
little pumpkin in my coffee to try to convince myself that it
feels like fall outside.
Plus, it makes the
pumpkin pie
feel a
little redundant.
Todays recipe,
Pumpkin Chia Coconut Parfait is not only convenient in its makeaheadability (< ---- thats the technical term btw), it also has the advantage of
feeling just a
little bit fancy.
You can add different kinds of nuts and seeds, but both walnuts and

I wanted to just make it
feel cozy so I added a sweater blanket, a few cotton stems and sweet
little pumpkin on a tray.
After being sick for over a week I woke up this morning to these sweet
little pumpkins that made me smile:) Would
feel so blessed to be chosen:)
