I now know the tweaking of the amount of water to begin with then to add to obtain my desired consistency and intensity of hue after whisking with
a little hand whisk, so I didn't want to add additional water which would thin the mixture too much.

Add a splash of white wine (I had a yummy chardonnay on
hand) or dry sherry and a generous dollop of sriracha and
whisk the orange bubbly amazingness until all the
little golden bits of scallop have released from your pan.
I do have one
little problem though — I don't have an electric
hand mixer, only a good ol'
whisk.
Place all the ingredients in either a stand mixer bowl with a
whisk attachment, or a large mixing bowl with handheld beaters (or by
hand with a
little extra elbow grease).
Or by
hand which will take a
little longer, maybe up to an hour but with consistent slow even stirring with a
hand whisk you will eventually reach the trace stage.
Whisk a
little more by
hand if you'd like it a bit thicker.
