Upon my insistence, Pierre called home the next day to check on her and was told that she passed a wonderful day out with her grandparents and enjoyed herself thoroughly and that she didn't asked for us once (to my surprise and a bit of a disappointment - Am I being selfish to want her to miss us just a little bit?).

Today we are having a quiet day at home, opening gifts from Santa and just enjoying our little girl's first Christmas.

Returning home from a wonderful holiday would under normal circumstances feel a little sad and I would miss the sun, freedom and lovely days spend by the sea listening to the soothing waves.

And because decorating can be quite addictive, a few days later, I found myself carrying home small golden ball ornaments to decorate our little tree some more.

The older I get, the less I am «into» Valentine's Day, but I have two little kids who still think it is an amazing holiday, so anything red, pink, and heart shaped is welcomed into our home on the 14th.

This recipe does need you to plan ahead a little, soaking cashews for the best part of a day before you make the cheese, but if you are the plan - ahead type of cook, or can soak the cashews before leaving for work and complete the prep when you return home, this dish is worth the effort.
