time (still didn't take as
long as 20 minutes to
cook but maybe my oven runs a
little on the hot side if you know what I mean).
You could
cook the tripe for a very
long time as tripe itself has very
little flavor.
The
cooking time was the same tho, perhaps even a
little bit
longer.
I need to work with it, as I would have preferred them to be softer... but, I played this same recipe off on a stack of fresh Asparagus the next day... and they got soft and tender when
cooked longer... so, they just need a
little time on lower heat... then a last minute sear for the browning... YUM

For items that are going to be in the oven
longer than cookies, like muffins or cakes, I also add a
little moisture (maybe an extra 2 Tbsp per cup), to counteract the drying effect of the extra
time things have to spend in the oven to finish
cooking at high altitude (lower boiling point, and all that).
