the first batch i did was like
little pancake
sized muffins that didn't rise and were very mushy in the centre, even for being in the oven an extra 20 min.
Should I not have been so lucky, my plan was to pull out a paper
muffin liner and cut a circle of ham just a
little bigger in
size.

I saved a
little to make my favourite Stewed Rhubarb with Orange then chopped up the rest to go into some sweet, snack -
size muffins — lovely with a cup of tea!
* my oven dish was approx. 20x10cm in
size and I had a
little mixture left over that wouldn't fit in so I filled a silicone
muffin case as well.
i used 2 different
sized cookie scoops to spoon this batter into the
muffin tins... i layered batter, cheesecake filling, and a
little more batter on top.

You make a pretty simple granola mix, and then instead of spreading it out on a sheet to bake, you press into mini
muffin (or full
sized muffin) tins to bake into these cute
little bowls.
* My
little liners are for traditional faery cakes - much smaller than a cupcake or
muffin, but cupcake tins seem to only come in big
sizes now.
I roasted the beets with a
little olive oil and salt first, then peeled and sliced them and placed them at the bottom of a large
sized muffin tin that was well oiled (also with olive oil).
