i'm fairly sure that when i scaled back my dairy intake my soul shrank a
little at the thought of never having
peanut butter cups again.
Today I have vegan - ified those
little chocolate
cups of heaven and traded in the
peanut butter for nutritious MaraNatha Maple Almond B
butter for nutritious MaraNatha Maple Almond
ButterButter!
Perhaps an additional
cup of confectioners sugar might be added to the
peanut butter to solidify that layer a
little better.

Since the filing was a
little bit soft from the vegan cream cheese (it's oozier at room temp than regular cream cheese), I added a heaping tablespoon more
peanut butter and a
little more than a
cup more powdered sugar and that did the trick for me!
You could also add something like a
cup of ground graham crackers and that would help make the balls made from ground
peanut butter a
little firmer.
And the goodness of mini Reese's
peanut butter cups really puts these
little treasures over the top in the taste department.
And honestly, the only thing that makes these cookies a
little harder than your average cookie is making your own
peanut butter cups.

peanut butter cups evoke wonderful memeories tracing back to when I was just a
little guy.
The only thing I subbed was a
little bit of canola oil for the shortening, and instead of letting the chocolate
cups harden all the way first I pushed the
peanut butter balls into them so they were more level with the top of the
cups.

So this time I did 1
cup + 1 tbsp honey, but I replaced a
little less than half the
cup with
peanut butter.
That's why I've put together my favorite dark chocolate
peanut butter cups, using unsweetened chocolate, a
little honey and stevia and some good ol' natural
peanut butter.
The only thing I did differently from the recipe was to use an entire jar of
peanut butter, because the amount called for would have left a
little (and also so I wouldn't have to wash
peanut butter out of my measuring
cup) and to beat the whipping cream to soft peaks and then add the
peanut butter / sugar mixture to the whipping cream and beat until combined and light and fluffy.
When I was
little my favorite candy was always Reese's
peanut butter cups (do I even have to explain why?)
Finally, do a
little dance to show your excitement at the thought of the vegan chocolate
peanut butter cups waiting in your fridge!
Frosting worked perfectly but tastes a
little too much like honey for me so I ended up adding about 1/3
cup more
peanut butter.
There should be a
little space between the
peanut butter and the sides of the
cup and the melted chocolate will pool there creating the walls of the
cup.
