I have a pumpkin muffin or two in my fridge that are in dire need of something just like this to slather on their bare little fluffy tops!

I already have a healthy pumpkin muffin recipe on here that I love but I thought I would try something a little easier by adapting my most recent muffin recipe obsession and making a flourless version in a blender.

For years I made pumpkin muffins from a recipe I cut out of the Philadelphia Inquirer — cut out, with a pair of scissors, and then kept track of on a little piece of newsprint.

So let's talk a little about the ingredients used in these delicious Pumpkin Muffins.

I did these delicious muffins just the other day with my little pumpkin - and she LOVED them.

And really with the fibre from the pumpkin and the little fat, it really is better for you than many of the muffin recipes out there.

I just made with some changes... spinach for kale, because that's the green I had on hand, shaved parmesan for pecorino, one piece of bread, and a few marcona almonds finely chopped, roasted chickpeas and roasted cubed butternut squash (because I had some left over from the pumpkin feta muffins although the dynamic of the salad was a little different, it was delicious.
