They are my take on a classic
Rice Krispie Square but they have a
little added salt, lots of peanut butter, and malted
milk powder to enhance the toasty flavor.
It was fabulous but I would probably use a
little less
rice milk next time and reduce the almond extract to 1/2 tsp.
I made extra coconut
rice because I'm a coconut fanatic and will eat some later warmed with a
little milk and honey.
(Mark Bittman's Lamb Curry makes good use of the rest of the can of coconut
milk, but then again you can just use the whole thing in the
rice and add very
little water to equal the 2 cups.)
