A dish traditionally made
with skin - on chicken, rendered chicken fat, lots of butter, and full fat milk, I slim things down considerably — skinless chicken (and therefore no chicken fat), a
little butter, reduced fat milk, whole wheat flour subbed for a portion of the white — and instead inject lots of flavor
with loads of aromatic vegetables and simple herbs, both in the stew and in the dumplings (hello, tarragon - parsley - and - chives dumplings, my
little darlings).

A

Every one of these
little potato bites has tender, flavourful seasoned
skins, the perfect ratio of toppings to potato, and they're creamy and moist throughout the whole potato (
with or without a tiny pat of vegan butter!)
Bananas are most often sold when their
skin is still bright yellow, sometimes even a
little green, which indicates that the flesh is still quite hard
with little flavor.
Put a pat atop a steak, smear it on thick toasts
with a pinch of sea salt or make your holiday turkey a
little more interesting this year by rubbing the butter both over and under the
skin.
I eat avocados straight out of their
skins with a
little pink salt and lime, make guacamole
with them, use them in salads and «bowls», use them in dressings in place of mayo to give LOTS of creamy richness, I make avocado pudding pretty regularly, and I even bake
with them now!
I eat them plain straight from the
skins with nothing more than a
little freshly cracked pepper and a spoon.
About an ounce or so grated on whatever I'm eating and then deal
with the aftermath (itchy
skin and a
little stomach distress).
The
skin is edible but can be kind of tough so I would peel them, rub
with a
little oil, salt, and pepper and grill until tender.
I used about 3 small potatoes and boiled them
with their
skin on, let them cool a
little and then mashed them to get my good cup of mashed potatoes.
They are best charred,
skin and all, on the comal,
with a
little butter and salt and then the beans are finagled out
with your teeth edamame style — a street snack eaten in Mexico AND Israel!
I'd suggest grilling the chicken
with no sauce for a
little bit on high heat (to crisp up the
skin), then moving to indirect heat and basting
with bbq sauce a few times until it's fully cooked.
