Since the filing was a
little bit soft from the
vegan cream cheese (it's oozier at room temp than regular cream cheese), I added a heaping tablespoon more peanut
butter and a
little more than a cup more powdered sugar and that did the trick for me!
Simply sautee the mushrooms (chopped into strips) in some
vegan butter with a
little dried thyme, salt, & crushed red pepper over high heat until they have crisped evenly.
I wanted to create a
vegan version of those classic peanut
butter cookies — rich, soft, and with the oh so classic
little fork marks.
And if I'm not disciplined in making snacks and carry along meals for myself, I'll end up at the 7 - 11, filling myself on processed chips,
Vegan cookies (Nutter
Butters mostly) and
little or no greens each day.
I love making my own because I find cutting cold blocks of
vegan butter into coarse
little crumbs insanely therapeutic.
I just think to eat it properly you need to cut off a slice, toast it (we use a toaster oven), and add a
little slice of
vegan butter.
Every one of these
little potato bites has tender, flavourful seasoned skins, the perfect ratio of toppings to potato, and they're creamy and moist throughout the whole potato (with or without a tiny pat of
vegan butter!)
Remember: no white flour, no
butter and no eggs — there's
little in there that would make these
vegan sugar cookies go a deep golden brown colour.

BUTTER but here are some reasons: 1) coconut oil is costly and my aim is not only to avoid using unethically sourced products, but also to reduce the cost of food; 2) coconut oil has a very low melting point, even lower than spreadable butter, and even in its solid state it is quite soft, so I am afraid this vegan butter will not be fit for making puff pastry; 3) for all I know, and I know little, so I am not completely sure of this, coconut oil has a better nutrient profile than shea butter and is less harmful (one may infer it from the resemblance between shea butter and palm

It makes it a
little easier to get the
vegan butter evenly distributed throughout the flour.
Paste over a
little coconut oil or
vegan butter over the crust and bake for a few more minutes until the crust is golden.
My personal philosophy: when you're making a main course of a vegetable, it's okay to indulge in a
little bit of
vegan butter once in a while.
Finally, do a
little dance to show your excitement at the thought of the
vegan chocolate peanut
butter cups waiting in your fridge!

I used grated Parmesan cheese (can sub
vegan Parmesan), unsweetened cashew milk (can use milk of choice), a
little bit of whipped cream cheese (can use

butter or ghee), fresh garlic cloves, lemon zest, black pepper, and salt.
To make this you need

little bit of almond milk.
