I've made it plain, with Parmesan and lemon, and also jazzed up
a little with baby spinach, chicken, and cheddar cheese for a special cheap and cheerful recipe package I put together for SavvyMom.

Fortunately, I happened to have a nice mix of ingredients to work
with — some fresh asparagus,
baby spinach, and a
little bag of sun - dried tomatoes from the farmer's market, mozzarella leftover from making pizza, and the ever - present jar of marinated artichoke hearts in the pantry.
And I stacked two on a nest of fresh
baby spinach, topping them
with a
little vegan sour cream and cranberry relish — red is the complementary color of green — leftover from Christmas, finishing
with a sprinkling of roasted and lightly salted pepitas.

I added a handful of

little fresh thyme while the eggs were cooking, too... very yummy
with a
little homemade hot sauce on top.
My favorite way to eat it is layered on top of a bed of
baby spinach then top it off
with salsa, a squeeze of lime juice, avocado, some cilantro and maybe just a
little shredded Mexican cheese.
Top each crisp
with a
little bunch of sprouts or a few
baby greens or
spinach leaves.
Add a handful of
baby spinach (or whatever leafy green you happen to have) and some shredded rotisserie chicken (something you should always have on hand, in my opinion), and season
with salt, pepper, and cumin for a
little kick.

I did make this
spinach soup in our cool
little baby food maker, but you could easily do it
with a microwave, a bowl and a blender.
I made her
baby food from scratch and added
little flourishes - like pureed
spinach with goats milk yogourt, and pureed eggplant
with onion and garlic.
Dinner: — ~ 2 cups of boiled mung dalas beans (
with some ginger, curry spices mix and onions sautéed in a table spoon o virgin olive oil); — 2 cups of greens: lettuce,
baby spinach, ruccola; — a handful of walnuts and almonds; — a cup of green tea; — a
little piece of black chocolate;
It is a mix of arugula and
baby spinach, sunflower seeds, red onion, feta and watermelon topped
with a
little pomegranate balsamic dressing.
One of my favorite quick & easy keto meals is fried eggs on
baby spinach — this time
with a
little cheese sprinkled on top.
