Keep in mind you can also use one big
loaf tin too!

I'm so sorry to hear that, sadly the issue is that baking it as a
loaf tin just makes it
too thick and the mix was designed to cook as a cake so it just wouldn't cook if it was that thick!
Lovely cake perfect for 2 - I made it once in a
loaf dish (didn't have a small cake pan), and then I did it again and, of course, put it in a small cake
tin (but it was
too flat).
And I
too split them into mini's - used muffin
tins and the
loaf pans.
My
loaf pans were
too wide so I used 6 Texas size muffin
tins and they came out great.
My crockpot is
too small for my
loaf tin: (My breadmaker has a gf setting with only one rise (around 3 hrs in total).
It's in the oven now, in a bundt
tin as it looked
too much batter for the
loaf tin.
Mine
too overspilled the
loaf tin so will try a different
tin next time.
