The night before the discussion I attended,

Slow Foods.
The menu was devised in association with the
Slow Food movement which campaigns for traditional
local producers, and many of the
foods were from their «Ark of Taste» list of endangered
foods.

And while we're seeing a resurgence of interest in so - called «real
food» or
slow food and
local food, it's going to take a lot more than a few urban rooftop farms in big cities, or the expansion of certified organic shipping container farms, or an explosion in countertop gardening units to go from our current wasteful
food and agriculture system to a model that is ultimately sustainable and future - focused.
It is important to remember that
slow and
local food is deeply embedded within traditional ways of life.
