The reality
of those coffee shop
muffins is that no matter how many seeds they try and cram into them, they're really just earthy
looking cupcakes.
I found your recipe when I
looked up «whole wheat banana
muffins,» because I love substituting whole wheat flour when I can, and I loved that you used Greek Yogurt instead
of butter.
If you
look at my «
muffin photo» you can see that the
muffins in the front are sugar - free and have plain cinnamon sprinkled on top
of them; and the other
muffins have the cinnamon — sugar sprinkled on top.
Also the size
of your
muffin tins will affect the outcome so if yours are smaller, just keep an eye on them and when they smell good and
look done, start testing them with a toothpick.
That might not sound like a lot
of protein, especially if you're
looking for substantial vegan protein sources, but it's effortless to get a few tablespoons into a salad, smoothie, sandwich,

Just today I was sitting in my kitchen having a cup
of tea and I seen the bananas
looking there best for a cake,
muffin, loaf whatever.
I'm always
looking for healthy
muffin recipes, but I sort
of knew this one was going to be a dud.
Of course, being an experienced baker I just
looked at the ingredients and decided to make these
muffins.
I took a
look at many
of the recipe reviews for these
muffins and incorporated their suggestions.
I'm
looking for a
muffin recipe for one
of the breakfasts.
But I knew that I was able to do it once, so keeping in the original spirit
of the challenge
of baking wheat - free, I decided to really take a
look at the recipe, start from scratch and build it from the ground up, and see if I could make a good
muffin without xanthan or guar gum.
The photo

muffins caught my eye, they
look so good!
You don't want to fill them to the top, or they will puff a little over the edge which takes away from the donut hole
look and gives more
of a
muffin look.
For the sake
of «movie magic» I had to shoot the
muffins in an unnatural position, you know so as to
look pretty on camera and all that.

looked great but the inside was doughy and I used cupcake liners and they baked right onto the liner so I could only eat about half
