However, I did a simple Google search for vegan nut
loaf and found several recipes (
looks like a lot of them use bread crumbs
as a binder).
With the larger pan the
loaf of course didn't rise
as high, but it still
looked nice and was done in 45 minutes.
Mine
looked great before it went in the oven, indeed when I took it out it
looked good but the little tapping sound of the seeds hitting the floor
as I carried the
loaf from the oven to the counter was the first indication that the seeds had not stuck on.
I ended up finding and buying a
loaf from my local store
as backup, only to find that mine was actually more flavorful and better -
looking!

as I had to cook my still VERY moist banana nut
loaf for over 1.5 hrs when the original recipe called for your typical 1 hr... The darn thing just didn't want to dry up... But I ended up removing it from the cooling oven after I came back from running errands and even though still «wet», it tasted awesome... I was
looking for a recipe that called for coconut flour
as I thought that might improve on the absorption capability and came across your recipe... sounds perfect!

It still
looked like crap, but, if you're totally against pancakes
loaves, this batter works just
as well with the traditionally shaped stuff.

I love the idea of making this bread and plan to buy the right pot to bake it in, but I have one question first for you: From your pictures, it
looks as though there's no difference in the sizes of the
loaves baked in the 5.5 - quart pan and the one baked in the 7 - quart pan.

as I am doing a cooking class in September that will be featuring one.
I give two options, choose which end result you prefer and go from there: bake without a pan for a true gluten free artisan bread
look or bake in a round or springform pan for a more rounded
loaf that even works well
as a bread boule for soup!
It happens to me all too often
as well (except for that one time where the attempted pancakes turned into unidentifiable mixture of half burnt, half raw goo but that's another story) I love how comforting and homey this

as you said it's all about hydration... I'm on my 6th or 7th
loaf as I type..

as good
as anything you can get from a bakery.
