Just a question I love that all recipes are so simple... but you use
a lot of nuts in a lot of recipes.
I haven't had much luck with replacement flours and I see that you use
a lot of nuts in your baking.
It's also delicious and a bit lighter than most which can use
a lot of nuts in the filling.
Renee, I know, same here... there are
a lot of nuts in the book, but many of the new recipes in the update are grain free, and I tend to use coconut flour when possible.
I think I'm now better adjusted to having more food prepped in advance than I was, but... there's still
a lot of nuts in my diet.

Place this

nut milk bag and kneed out excess water (this may take a few minutes as cauliflower contains a
lot of water — it's a really important step though, please don't skip it!).
I was wondering if you could make small amounts
of nut butter quickly enough
in your Magimix mini bowl (1,2 L) or if the chopped
nuts get stuck on the sides, and that you need to scrape them off and... be a
lot more patient.
I also eat a

nuts in my diet so feel that it is OK to limit chestnuts as they are less nutritious.

I am badly allergic to
nuts and this seems to result
in a
lot of your recipes becoming «out
of bounds» for me.
Gnocchi tossed
in a creamy Parmesan sauce with

of mozzarella cheese, fresh tomatoes and toasty pine

lot of candied
nuts recipes require egg whites and / or baking
in the oven, which, for me, sounds like a bit
of a hassle.
It's a good way to keep baking powder fresh, however I think it's because a
lot of people don't bake at home —
in France, bags
of sugar and flour are much smaller than they are
in the states (
in the US, there are huge bags
of nuts, flours, sugars, and other baking ingredients
in supermarkets)- which I think is because there are so many bakeries (and
in cities like Paris, kitchens are tiny) and
lots of people buy their baked goods rather than make them.
There are
lots of variations to this cake, but I decided to stick with a version that has coconut
in the cake layers, and is topped with coconut, and the only
nuts are on the outside
of the cake.

In other words, since
nuts contain less phytic acid but a
lot of enzyme inhibitors, the salt soak works best to activate enzymes that de-activate the high amount
of enzyme inhibitors.
Variety is extremely important
in a vegetarian diet, and as I already eat a whole
lot of cashews (hello cashew butter) I wanted to experiment with a different type
of nut.
