What I

I have been gluten - free for nearly 3 years post celiac diagnosis,
grain - free and dairy free for just over a year (though I have a daughter and son with allergies and sensitivities to casein so I have cooked primarily dairy - free for more than 8 years)... my hubby is a die - hard gluten -
loving dairy -
eating man and I thought he would struggle with this transition far more than what he has.
I've always
loved grilled cheese — and in the past, when I
ate grains, I would sometimes make fancy grilled cheese sandwiches for dinner with a variety of cheeses and ingredients, then cut them in small triangles so everyone could try all the different types.
Paleo people
LOVE their vegetables and often
eat more of them than vegans / vegetarians who get a bulk of their calories from
grains.
The only things I still
eat that are not paleo are whole
grain bread and quinoa (in very small portions and very seldom), yogurt and legumes (I
love black bean cakes so I'm sad to see those go!)
I
love eating whole
grains I do a lot of noodles.
I'm the same way as you — I
eat my
grains and gluten without any problems, but I *
love * experimenting with different non-wheat flours, and I
love trying foods with different textures and flavors that result from this experimentation.
