I love perogies fried with bacon & onions but traditional ones are tummy turning little packets of cheese, flour & potatoes.

And as if all those roasted vegetable flavors weren't enough, we add gnocchi because we just love those little cheek - pinching potato dumplings, plus a good dose of basil pesto — extra special bonus points if you made homemade pesto while basil was at its peak back in the summer — and a big handful of seasonal greens because, healthy January is here!

I love picnics and it seems to be the only thing we can do lately with the little babe;) I love that the dressing has capers, and that the potato salad has more substance with the kale and chickpeas.

I love the little family of potato spiders all together.

And I love how they come out a little different with each batch because of the leftover mashed sweet potato flavor.

So I started googling sausage soup, which sort of turned into kale and sausage soup, but so many of these soups had potatoes in them, and while I love potatoes, I do feel they are a little lackluster and mostly there for filler.

My new love to roast is radishes.I've fed them to people who didn't like radishes and they thought they were little red potatoes due to color and taste.

When I'm really lazy, I even use canned potatoes (I love those little diced ones!!).

But throw on top of that a little tofu scramble and some more sweet potatoes (in the form of a Smoky Glazed Sweet Potato Slice), and you can see why I'm so in love.

I do love Dauphinoise potatoes but a little naughty for the waistline, My favourite food of all time is Mousaka but made with courgettes rather than aubergines, my mum calls it stuffed courgettes which I have never understood because they are sliced lol

I was wondering whether this sweet potato bowl might be a little too weird — but I love it so much myself!

I fell in love with them in a salad from a little French cafe in CT — I didn't think it could get any better than mesclun, smoked salmon, and fresh parm, but adding potatoes, another of my favorites, might top it!

One point to consider — one of our daughters loved sweet potato so much that we fed it to her a little too often — her skin took on an orange hue!

If you love breakfast hash browns but aren't eating butter, try cooking your shredded potatoes in a little coconut oil — the texture will be the same and don't worry, the coconut oil doesn't make your food taste like a piña colada!
