I loved the concept of a single shopping list for 5 weeknight dinners, but at the end of the day, this is just an OK roast chicken recipe.

Don't get me wrong, I love me some pasta, but I make the same exact version on Friday nights — Dude Diet penne with spinach pesto, plus roasted cauliflower, chicken, and goat cheese — so I rarely experiment with other recipes.

We love a classic roast chicken as much as the next guy, but every once in a while we like to dress it up.

I ran across this fruit vinegar marinade on one of my favorite blogs 5 Second Rule and loved the idea for a new twist on roast chicken.
