Lentils are a go - to for me... I love simple curried lentil soup (veg broth, diced onion, mushroom, curry powder, cumin, garlic, and lentils + any add - ins you like... squash or potatoes help add bulk to it, I like adding spinach or kale, tomatoes add a nice acidity...) or an even simpler cold lentil salad made with red onion, diced tomatoes, lentils, chickpeas, and lemon juice / vinegar / EVOO.

I loved that the salad used whole leaves of the parsley and other herbs making this step quite simple.

I love to serve this with a simple side salad and call it a day — it's one of those meals that you leaves you feeling satiated but not the least bit heavy.

I make all different sorts of curry (simple, delicious, lots of variety of types), these days we're having Greek salad with fresh bread on a weekly basis (the bread is to sop up the dressing, but who's going to not love fresh bread and salad?!)

It has nearly all of my favourite salad veggies (I love a packed salad), but you could add more variety, change it up completely or keep it simple, what ever you like.
