Instead of just serving tomatoes fresh, we squeeze / punch / smash them up a bit so they get softer and release some of that
lovely juice that gets mixed
with olive oil, a splash of the hot pasta water, fresh
basil, garlic and pickled capers.

basil leaves and a spoon of very good quality olive oil, a slick of equally good balsamic vinegar and a grinding of black pepper.

I used dabs of spinach pesto because green is so pretty
with the color of the beets (but dabs of a mint or cilantro chutney or mint / cilantro oil squeezed into decorative lines would be nice too), cilantro sprigs (but Thai
basil or mint would be
lovely), and cashews (though chopped peanuts would be appropriate too).
Red wine vinegar would be
lovely in place of the balsamic and a crumbling of feta cheese would be a perfect addition if you tolerate, just scatter over the top
with the
basil leaves when you're serving.
Love this sweet twist on caprese - sounds
lovely with both mint and
basil.
