Cut in shortening and butter (or all the butter, if only using butter) until mixture is crumbly - a not so even mixture of little and
larger lumps of flour covered fat.
I like to knead the dough with my hands on to make sure all the almond meal gets mixed in so you don't have
lumps of the flour showing.
How do you keep the frosting from having
lumps of flour?
Make sure that there are
no lumps of flour left.
Because when you devote that much time to something — a partnership, a child,
a lump of flour and water and salt — the love that is poured in will often be enough to withstand a failed proof here, a forgotten to change a diaper there, a missed call here.
Fold the dry mixture into the wet, but do not fully combine; there should still be
some lumps of flour.
Mix well, to ensure
no lumps of flour remain.
If there is a corner where there is too much flour, tap it out so the cake does not bake with
a lump of flour in one corner.
Add the dry ingredients to the wet ingredients, mixing well to get rid of

Process until
no lumps of flour are present and everything is incorporated.
Mix through with a whisk to combine ingredients and break up
any lumps of flour.

the lumps of flour to dissolve.
