Could you substitute macadamia
nuts for the cashews or perhaps a combo of
mac and brazil
nuts?
Living in Hawaii, I subbed macadamia
nuts for pine nice (
macs are so much cheaper!)
This recipe used to instruct you to soak about a third of the macadamias but I prefer it without soaking them at all as
macs don't soften like other
nuts when soaked.
As for the flavour being «too strong in Mac
nuts» as they are the base of the pie that isn't surprising, as noted in the recipe the
macs (or a portion of them) can be subbed for cashews.

This chili
mac combines four ingredients: your favorite chili, a beer (or broth), elbow pasta, and a splash of cashew, coconut milk, or other
nut milk.
The
mac n» cheese is simply an older recipe, and I didn't soak my
nuts and seeds very often back then.
At least now I know that a
nut - based
mac is probably not going to work.
But the health -
nut in me is always on the look - out for healthier - yet - still - delicious versions of the classic, so when a friend mentioned that she had tried «butternut squash
mac and cheese» I was inpired to create my own squash
mac and cheese recipe.
Not gluten, dairy, eggs, soy or
nuts, but with the creamy, cheesy flavor of
mac and cheese.
