I noticed that this recipe is nearly flipped from your basic french
macaron recipe in terms of the almond flour and powdered sugar, is that correct?

macaron recipes for the book.

I am using 65 % cocoa solids chocolate, usually I like to work with the dark chocolate from Schogetten as it behaves good
in various
recipes I have used it:

I've been used this chocolate and salted caramel combination

I no longer have the old
recipe using erythritol because it simply just wasn't any good I did do a quick search online and found this one though: https://www.finedininglovers.com/recipes/dessert/gluten-free-macaroons-sugar-free/ I haven't tried xylitol
in Macarons because it doesn't «agree» with me, but
in my experience of over 30 failed batches, French
Macarons will not work without sugar.
If you are struggling with the same thing, my first tip is to look for
recipes that you don't have to modify — for example,
in France there is a long tradition of baking with almond flour, so the authentic
recipes for
macarons (fancy and rustic) and financiers (pictured above) are naturally gluten - free.
