Refreshing coconut water and plenty
of baby spinach makes this smoothie go down like a dream.
The only alterations I
made were omitting the yogurt and using smart balance lite (to
make it vegan) and I used
baby spinach instead
of chopped
spinach.
Fortunately, I happened to have a nice mix
of ingredients to work with — some fresh asparagus,
baby spinach, and a little bag
of sun - dried tomatoes from the farmer's market, mozzarella leftover from
making pizza, and the ever - present jar
of marinated artichoke hearts in the pantry.

spinach + fontina + roasted garlic chicken sausage; TJ's whole wheat rotini; go 1.5 times on the bechamel as suggested; use
baby broccoli instead
of rabe (and double the amount called for), and add sautéed
baby Bella mushrooms.
I
made this tonight using a mix
of spinach,
baby kale, and chard and also added a bit more water to
make it more soup - like.

of Cabot Lowfat Plain Greek - Style Yogurt, Worcestershire sauce, half teaspoon ground red pepper, a shallot, Cabot Habanero Cheddar (or Cabot Jalapeno Light Cheddar), six whole wheat hamburger buns, sliced avocado,

And when I pureed the soup with my immersion blender, I did so just barely, leaving bits and pieces

of spring water... blend and enjoy!

of a tasty weekend lunch.
