I first started experimenting with this recipe years ago in my downtown nyc studio kitchen, or bedroom — they were so close together I don't even know, I was perplexed at how chocolate mousse could be
made out of avocados.
They love their donuts too, they even
make them out of avocado!
We ended up with an adorable butterfly turkey and cheddar sandwich, a cheesy grilled cheese sandwich shaped like a monster with eyes made of veggies, and a crocodile
made out of their avocado hummus.
Besides using almond flour and other mixtures of flours, you can actually
make them out of avocado!

I was skeptical

I have been enjoying homemade Vegan Chocolate
Avocado Pudding for over a year now, but it is one
of those recipes that seems so easy to
make that I have been hesitating to put it up on the blog... Not because I think it is too obvious to share, on the contrary, I think people are quite surprised by the idea
of making pudding
out of avocados.
I put it on an 8 ″ whole wheat tortilla with a light swiss laughing cow cheese wedge & half
of an
avocado... it mellowed
out the spiciness (my grocery store only had 1 kind
of buffalo sauce & it definitely has a kick to it) &
made it incredible!
FYI: The second time I
made them, I was
out of coconut oil so I used one ripe medium
avocado in place
of the oil and they turned
out great.
Really, the only things she will eat rights now — roasted pastured chicken and the crispy skin, raw milk, raw cheese occasionally, pasture butter
made into homemade fudge, grassfed buffalo or beef meatballs,
avocado (though not much lately), kale chips, roasted broccoli, pumpkin pancakes (but we're running
out of pumpkins to roast and puree) and some baked treats
made with sprouted brown rice flour.
At first, I bought Annie's Green Goddess Dressing (and that would be a great substitute if you don't want to DIY) but the next time I
made these I went all
out and
made my own homemade (vegan) Green Goddess Dressing, chock full
of all the fresh herbs and silky
avocados.
Without squeezing an
avocado yourself, smelling a piece
of fish to
make sure it's at peak freshness, or picking
out the best tender fresh herbs for green sauce, you're taking a gamble.
