I
made these with oat flour instead
of buckwheat, coconut nectar instead
of maple syrup and white sweet
potatoes instead
of orange ones (only ones available where I was in South Africa) and they turned
out DELICIOUS.
They do turn
out much less dry in the oven for me as well, but the type
of sweet
potato makes a big difference too.
You can
make them with all white
potatoes or swap
out some
of the white for a sweet
potato twist.
Making veggie chips
out of root vegetables, such as beets, sweet
potatoes, or yams is a bit trickier.
This result is way amplified if those fries are
made out of sweet
potatoes.
But
of all the unique and wonderful dinners we've
made, one
of the stand -
outs is our sweet
potato gnocchi with Italian sausage in a brown butter sage sauce.
Cut them in half and scoop
out about 1/2
of the inside,
making sure to keep a layer
of sweet
potato within the skin so that it can stand on its own.
I
made it today with sweet
potato instead
of pumpkin, and I left
out all the spices and the sweetners because I wanted a savory bread to go with fried eggs.
Just a tip: if using ffresh shredded
potatoes, they have a lot
of water in them so press them against a colander or strainer before you use them (just like when
making fresh hashbrowns) to get all the water
out.
They turned
out absolutely scrumptious, but i
made the mistake
of using quite creamy mashed sweet
potatoes, so they kept falling apart in the waffle iron.
I'm pretty sure that, given a day or two, you could solve any problem, and if I may, I would like to suggest that you start with my pet conundrum: how to
make potatoes come
out of the ground already fried.
I may have to break
out of our tradition
of Sweet
Potato Casserole this year and
make these.

In these recipes they're being really creative and
making bruschetta
out of everything from sweet
potatoes to chicken and steak.
Plus the way she has you slicing the sweet
potato it flat
out looks good and
makes for the perfect vessel to hold all
of those yummy toppings.
If the mashed
potato recipe they're accustomed to is the traditional one
made with milk and butter (as opposed to one decked
out with cream cheese, sour cream, and lots and lots
of butter), I think you'll do just fine.
The main reason I love this method
of making baked
potatoes is that the skin turns
out so perfectly.
