I
made a batch & i had some left
over so i
made a smoothie bowl out of it, added some vanilla protein powder to
make a
meal (that thickened it up too), sprinkled some banana chips, pumpkin seeds / pepitas, sunflower seeds & whole cashews on top.
I also used the left
over coconut water to
make the rice which really rounded out the whole
meal.
They can stand alone as a side dish or
make for an easy
meal if you serve them
over rice and add a runny fried egg on top (so good).
I
make lists, I plan a weeks worth of
meals and shop accordingly (actually, Miguel shops accordingly - with a typed up list, broken down by market) and I always cook with the mind set that there needs to be something left
over for lunch the next day.

meal (you are thinking twice about having us

Several other misplaced items and dirty dishes slowed me down and I didn't stop the timer every time, but I still managed to
make this
meal in JUST
over 30 minutes (if you're
making rice, you may need an extra 3 - 5 minutes to get that measured and set up).
I put a system in place
over the past few weeks to
make getting
meals on the table a little easier.
** Be careful not to
over process when you are
making the almond
meal because that could result in almond butter instead of almond
meal!
My mom has this way of
making the simplest dishes shine, graceful hands in combining a handful of ingredients to create a
meal, a bowl or plate that with just bite I am back in her kitchen 8 years old all
over again.

over the weekend — um, turns out this dog grandma
made chicken bone broth and added that to their dry food and they ate it like it was their last
