It's easy to
make —
roasted sweet
potatoes, corn, black beans, thinly sliced
red pepper and cilantro / feta.
Making this tonight with mashed
red potatoes and
roasted broccoli.
Other odds and ends — all in very small amounts of 2 to 4 tablespoons — in addition to the refried beans, Mexican rice, eggplant, tortillas, and grilled bread included a more risotto - like rice, caramelized onions (sort of fajita style), bronzed carrots (slices of carrot
roasted with blackening seasoning and brown sugar), green beans cooked with tomatoes and onion, very thick pureed white bean soup, about 5 sweet
potato fries, a couple of artichoke hearts, a dab of
roasted red peppers, and half of a veggie burger
made with black beans and corn.
We frequently
make tortilla soup with added veggies; recent soup faves include your
roasted tomato soup with cheddar toasts and a
roasted red pepper / leek and
potato one.
Pasta with homemade basil and pecorino pesto (
made with either pine nuts or cashews), this curry (http://www.tastemag.co.za/Recipe-1177/Chickpea-and-cashew-curry.aspx) that I've
made so many times that I no longer need a recipe,
potato and
red pepper frittata,
roasted tomato and
red pepper soup with smoked paprika, veggie burgers with homemade chickpea chips, lots of meal - sized salads (vegetarian), stirfried veg (sometimes with tofu puffs) and peanut sauce on mung bean noodles, dahl and basmati, haloumi salad wraps, veg green /
red curry.......

I
made a simple side of blanched
red cabbage, but steamed asparagus, broccoli, or
roasted potatoes, plus a grain such as quinoa or millet would be outstanding.
To the already baked dough, we spooned on a very thick layer of mashed
potatoes (simple to
make: I boiled peeled local Yukon gold
potatoes, drained them, then mashed them with organic butter and cream, added sea salt and pepper, then added water to achieve the correct consistency), then added the corn salsa (basically just fresh corn that we mixed with a bit of lime juice, minced
red onion and jalapenos) and the
roasted red peppers.
The second time I
made it, I had a few spare
red potatoes that I cut up and
roasted along with the fingerlings.
We
make it all the time and have been doing all kinds of variations - adding sweet
potatoes pan-fried in curried butter, or
red split lentils, or some leftover
roasted squash.
Roasted cauliflower,
red pepper, sweet
potato and beets have all
made their way into my hummus throughout the years, and it's tasted good pretty much every time — hummus has a very forgiving and highly customizable recipe.
Some of the things we regularly have on the tray is: local vegetables such as
red skin
potatoes or carrots,
roasted, milk, from a local dairy, in a reusable plastic cup, yogurt that we
make from the local milk and granola
made in house.
It
makes an excellent marinade for meats, especially
red meat, or drizzled over
roasted vegetables or
potatoes.
