main doshas, or energy systems, at work — Vata, Pitta and Kapha.
The Ayurveda Encyclopedia is an excellent comprehensive work of ayurveda as it is practiced today, and I still look through it often for the fantastic
dosha (drying / humecting / warming / cooling /...) properties listed of dozens of fruits, vegetables, grains, drinks such as coffee or tea, cooking herbs, sweeteners, meats, forms of dairy, etc, covering all the
main food groups.
