One of the biggest complaints about following a grain - free diet is that the alternative
flours, such as
almond flour or coconut
flour tend to be somewhat expensive, so
making pancakes or desserts while on a budget is hard to do.
1) Combine the dry ingredients (
almond flour / meal, tapioca
flour, baking powder, salt) in a medium bowl 2) In another medium bowl, whisk the milk, mashed banana, eggs, vanilla extract, and honey together 3) Slowly add the dry ingredients to the wet ingredients and mix until combined 4) Pre-heat a non-stick pan and melt a little butter 5) Scoop about 1/4 cup of batter in the middle of the pan to
make small
pancakes (the smaller the
pancakes, the easier it will be to flip them) 6) Let the
pancake cook on one side until it automatically unsticks from the pan, then flip it over until the other side turns golden brown 7) Repeat last step until all the batter is used up 8) Serve
pancakes warm with cut bananas drizzled in honey
When I started
making gluten free
pancakes I did a couple of things with coconut
flour and
almond flour.
These lightly sweet Paleo
pancakes are
made with
almond flour, so they're naturally low carb and actually taste like «real»
pancakes.
1 cup of old fashioned rolled oatmeal 1/2 cup coconut
flour 4 jumbo eggs 1 cup of milk (goat, cow,
almond or coconutmilk, if you use canned coconut milk use half water half coconut milk) 1/2 tsp baking soda 1/2 tsp apple cider vinegar (the secret to
making these
pancakes rise.
But if you'd still like to try
making these Paleo
pancakes, the only substitute I know of for
almond flour in Paleo baking is sunflower seed
flour.
Unfortunately I have never tried
making these
pancakes with just
almond flour but I think they should turn out ok but with a slightly different texture.
it's weird that your dough came out like
pancake batter... maybe the
almond flour you used is much finer than the
almond meal I used (
made by grinding
almonds in a food processor).
