On the weekends I sometimes
make an egg frittata or breakfast turkey sausage
-LSB-...]- cooked up stuffed peppers (my own variation, with carrots, spinach, onion and peppers)- baked paleo chocolate chip cookies -
made an egg frittata - grilled chicken and veggies for lunches (Rob did this -LSB-...]
It can easily be doubled to make enough leftovers for lunch the next day or repurposed into a new meal by adding some vegetables and
making an egg frittata out of it.

Frittatas are pretty easy to
make — all you need to do is whisk some
eggs together and and throw your ingredients into a skillet on top of the stove, then cook nice and slow.
I
made the
frittata through adding the onions to the pie dish (Step 6), refrigerated overnight, then added the
eggs and baked the next morning.
After you pour the
egg mixture on top of the vegetables,
make sure the
eggs get underneath the veggies also so the
frittata comes out uniform.
Tofu is an excellent substitution for

I know this step is similar to

frittata, but since this recipe focuses on the zucchini more than the
eggs, I felt that calling it a
frittata was not adequate.

I've
made Life Changing Bread topped with smashed avocado and
eggs,
frittatas studded with olives and goat cheese, and yogurt parfaits layered with berries and homemade granola.
Unlike scrambled or fried
eggs, which are so needy and require constant monitoring, the
frittata is just mixed together, placed in the oven, and forgotten while you take a shower, get dressed, and
