I
made an EXTREMELY similar recipe (exact same ingredients, just tweaking the number of
eggs and bananas slightly) to
make muffins back in December and they were really weird, too.
If you are having trouble getting the
muffins to hold shape upon removal,
make sure they are cooled first, try adding more broth or an additional
egg to the mixture, and
make sure you compact the stuffing tightly into the greased
muffin tin.
For a start, I didn't have any powdered
egg white, Dr Oetker or otherwise, but I did have two
egg whites sitting in the fridge leftover from
making raspberry
muffins.
Pour
egg mixture evenly into
muffin cups,
making sure it doesn't run over corners of bread.
I
make something similar to the
muffins alllll the time but using a soft tofu with a bit of ground flax instead of
eggs - i do nt add the bread, but will often wrap one up in a tortilla with some added veggies for an easy lunch!
