I used the gruyere I had from
making a flatbread for journal club, but you could swap feta, provolone, cheddar or even some gouda.
The first time I used Gorgonzola for the cheese, but «cheated» by using a store - bought Rosemary & Sea Salt Focaccia (sliced in half horizontally) instead
of making the flatbread.
Howeverrrrr, if you don't have time to
make the flatbread from scratch, feel free to use store - bought pizza dough!
However, if you can eat garbanzo flour you can
make a flatbread using that + water (use just enough to make it into a batter).
