I also try to explain to people just what you said: eating
GF «typically» cuts out a lot of processed
foods and forces you to
make your own
food... that's what
makes most people feel better... it's not the gluten proteins!
Combine flour (s), sugar, and salt (and xanthan gum if
making gf version) into a large mixing bowl or
food processor.
It saddens me that people have
made their
gf diets about fast
food not good
food.

Food Cake for years and even then I experimented with a mix.

making my own
gf foods for a couple of decades and for the last 2 yrs, paleo as well.
Bought vegan breakfast patties can be so expensive, and these satisfy the fast -
food - like horrible / lovely cravings just fine I
made them gluten free by subbing the flour and wheat bran with just over 1 and 1/2 cups of my usual
gf flour (1:1:1 of chickpea flour: arrowroot flour: almond meal + about 2 Tbsp ground flax meal + scant 1 / 2tsp xantham gum for every 1 cup of mix) and they turned out fantastic!

I used the remaining 2 1/4 c 1:1
GF flour mix that I bought from Wal - Mart... I don't know the brand (I repackage my flour because we're backed up to the woods and a stream... we battle ants and mice so I try to keep them from contaminating my
foods) anyhow... I was short so I used 1/2 c
GF pancake mix (cuz... what else do I do to try to
make this happen in a pinch?)

GF breadcrumbs: I took some Rudi's Multigrain Bread, toasted it, then pulsed in a
food processor when I recently
made some meatballs.
To replicate these
foods — and in all likelihood, yours taste BETTER —
makes us feel like it's not such a pitiful existence to have this disease (or an intolerance, or whatever reason for eating
GF).
Sensitive to gluten or not, you'll likely feel clearer, lighter, and even lose a few pounds if you
make an effort to stay away from most of the packaged gluten free «substitute
foods» such as
GF cookies and crackers.
